  Lentil Rice Loaf


This recipe comes from the The Virtuous Vegan. This lentil rice loaf is very tasty. I'm looking forward to the summer when I can make veggie burgers on the grill with this lentil loaf mixture. I'm sure they would turn out great since this mixture holds together very well.

1/2 cup walnuts, ground into course meal
2 Tbsp olive oil
1 onion, finely diced
1 large carrot, peeled and grated
1 cup mushrooms, finely diced
2 cup lentils, cooked
1 cup brown rice, cooked
3 Tbsp potato flour
3/4 tsp basil
1/4 tsp oregano
2 Tbsp ketchup
pepper, to taste
2 Tbsp soy sauce

Preheat the oven to 350F. Oil a loaf pan and set aside.

Sauté vegetables in the oil until soft. Add to a large bowl along with all the remaining ingredients. Mash all ingredients together. Press mixture into the prepared pan and bake for 45 minutes to 1 hour or until cooked through.

Let the loaf cool in the pan for 10 to 15 minutes. You can then serve this in squares whole or sliced. This is not the final step for me I like to cut it into serving slices then pan fry it until it’s dark and crispy on both sides. Pour ketchup on top. Serves 4
