Vegan Chedda Cheese Sauce


Can't think of a better way to start the new year off then to introduce vegan chedda cheese sauce. I served it over nachos with just some chopped pickled jalapeno peppers at a vegan potluck. They really like it! I love to spread it on tortilla wraps and just pan fry it....like a grilled cheese.

Not into making your own well there is a fantastic commercial cheese called Daiya. It's not like the crap vegan cheese we had to put up with in the past. Look it up on the net and see how people are raving about it and yes it melts, in fact its not that great cold its when you melt it that the magic happens!

It's available is some health foods stores such a http://www.panaceaecoshop.com/ a wonderful, totally vegan store in Toronto. You should try to support vegan stores with your business when ever you can. Give mine a try. It's way cheaper, low in calories and very tasty.

1 1/2 cups water
2/3 cup nutritional yeast flakes
2 Tbsp + 1 tsp corn starch
2 Tbsp soy sauce
2 Tbsp tahini
1 1/2 tsp lemon juice
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp sweet paprika

Add all ingredients to a blender and blend. Then add to a small pot on medium heat.  Stir often till it boils. Let sauce thicken the remove from heat. The sauce will also become more thicker once it’s refrigerated. Makes 2 cups.

  1. I've found the Daiya 'cheese' at my local Sobey's (and I live in Acton, so it will be worth the drive to Acton, but not for the leather store!)
    $4.99 a package, for cheddar, mozarella and a pepper jack flavour.
