Spicy Peanut Sauce Stir Fry

The Sky Dragon in Hamilton used to make a wonderful spicy peanut sauce which they served over veggies and rice. I would have it every time I was there. Now I've figured out how to make it myself. You have to try this.

Tofu Cubes
Half a container of medium tofu, pressed*
5 Tbsp cornstarch
peanut oil, for frying

Cut into bite-sized cubes. Toss with cornstarch, coating the cubes. Heat some oil. (just enough to ensure pan is coated) Fry the tofu cubes in batches, making sure all sides are lightly browned. Remove from pan and pat dry with paper towels.

2 cups broccoli, 1 cup carrots and 1/2 cup celery into
bite size pieces. Microwave or steam vegetables until tender.

1/2 cup vegan milk (rice, almond or soy)
4 Tbsp peanut butter (smooth or crunchy)
4 Tbsp chili sauce

1 Tbsp soy sauce (gluten free)
1 tsp chili flakes

1/2 tsp garlic powder

Heat vegan milk in a small pot. Add peanut butter, stir well. Then add other seasonings. Transfer sauce, vegetables and tofu cubes into a large pot. Stir and once thoroughly heated pour over rice or noodles. Serves 4
