This delicious, light dressing has become the staff favorite at Fresh restaurant. It's also my favorite too! Once you make this dressing, pour it into a dark coloured glass bottle to protect the flaxseed oil from going rancid. (I put it in this clear bottle just to take a picture of the dressing). I keep this dressing in a emptied, dark glass, olive oil bottle.
1/4 cup apple cider vinegar
1/4 cup water
1 tsp lemon juice
3/4 tsp soy sauce (gluten free)
1/2 tsp salt
1/4 tsp mustard powder
1/4 tsp sugar (Redpath brand is vegan)
1/4 tsp pepper
1/4 cup flaxseed oil*
3/4 cup light tasting olive oil (or any light tasting oil)
In a blender or food processor blend all ingredients together. Pour into a dressing bottle and shake well before each use.
*Flaxseed oil is available at health food stores and some grocery stores carry it too. It has a mild nutty flavor and is high in Omega 3 fatty acids. It goes rancid quickly. Once opened, it will be good in the fridge for a month. You can also freeze it (which is what I do) and it be good for six months. You will need to leave it out of the freezer for around 15 minutes for it to become pourable. Only buy flaxseed oil sold in dark coloured bottles that are refrigerated. Make sure to check the expiry date before purchasing.
