Carrot Hashbrowns

 
3 large potatoes, peeled and grated
1 cup carrots, shredded
1/4 cup brown rice flour
1/2 tsp salt
1/4 pepper

2 Tbsp coconut oil for frying
  
Place grated potatoes between some paper towels and try to remove all the water. In a large bowl mix all the ingredients (except cooking oil) with your hands until well mixed.  

Heat a frying pan over medium high heat. Add the oil, heat until very hot but not smoking. Form into 3 inch patties and place in pan. (Don’t worry about it holding together completely as it will bind during the cooking processes). Fry both sides until crisp and nicely browned. Sprinkle with extra salt and pepper, to taste. Carefully transfer each batch to a baking dish and keep warm in the oven. Serves 2
