Cut tofu block in the center into half, then cut those 2 blocks into half in the center and then cut those 4 slabs into half. That's the easiest way I know how to end up with 8 even tofu slabs. Lay a tea towel down then cover it with several paper towels. Place your tofu slices on the paper towels. It's a mystery why I have 9 cut pieces in the picture instead of 8...lol.
Then cover the exposed tofu slices with more paper towels and then with another tea towel.
The final step is just to add books to weigh down the tofu in order to press out all the water. Leave for 20 minutes then tofu will be ready to use in your recipe.
